Simmer pasta in a creamy broth sauce with chicken, broccoli, and Parmesan.

Prep time: 5 minutes

Cook time: 15 minutes

Serving size: 8 (1-cup) servings

Ingredients

  • 2 tbsp vegetable, canola, or olive oil
  • 2 tbsp all-purpose flour
  • 1 3/4 cups unflavored almond milk
  • 2 1/4 cups low-sodium broth
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp basil
  • 8 ounces penne, macaroni, or other pasta, uncooked
  • 2 cups broccoli, fresh or frozen, OR 1 (14.5-ounce) can green beans, drained and rinsed
  • 1 (10-ounce) can chicken breast, drained
  • 1 cup grated Parmesan cheese

Instructions

  1. Heat oil in a skillet over medium-high heat.
  2. Add flour, milk, broth, spices, and pasta to the heated skillet.
  3. Bring to a boil, then reduce heat to medium-low and simmer. Cook until the pasta is almost tender, about 7–9 minutes, stirring occasionally.
  4. Add broccoli or green beans and canned chicken. Cover and cook until mixture is warmed through, about 5–7 minutes. If using broccoli, cook until broccoli is tender.
  5. Remove from heat, stir in cheese, and enjoy!
